After a great evening of watching "Whatever Works", with our buddies Justin and Lisa, and watching a bit of PBS's "Botany of Desire", we decided to check on our Jerusalem Artichokes. Totally not suspicious or anything, digging with a shovel in the farthest corners of our yard in the dark, ten at night.... we found little nuggets of deliciousness underground.
Raw and thinly sliced they are like water chestnuts...yum!!!
Stir-fried with butter, they are like the most delicious artichoke-potato hybrid you have ever tasted... Delish!!!

Kevin just dug me up a full bucket but I haven't done anything with them yet. You've inspired me!
